Chicken salad

Tangy feta and crunchy veggies work beautifully with hearty grilled chicken in this salad recipe. It’s hearty enough for a full meal!


  • Black Olives, 20 jumbo sliced
  • Onions, raw, .5 cup, sliced
  • Red Ripe Tomatoes, 1 cupsliced
  • Feta Cheese, 3 cubic inch (crumbled)
  • Chicken Breast, no skin, 3 breast halves
  • Lemon Juice
  • Garlic, 3 cloves mashed or 1 tbsp
  • Pepper, black, 1 tsp
  • Olive Oil
  • Vinegar Salad Dressing, 2 tbsp
  • Lettuce, red leaf (salad), 1 head


Pound Chicken breasts. Marinate with garlic, lemon juice and pepper. Grill or pan cook with a little olive oil or cooking spray. Slice into pieces.

Layer salad starting with chopped lettuce, tomatoes, onions (sliced thin), then chicken and top with feta.
