- Black Olives, 20 jumbo sliced
- Onions, raw, .5 cup, sliced
- Red Ripe Tomatoes, 1 cupsliced
- Feta Cheese, 3 cubic inch (crumbled)
- Chicken Breast, no skin, 3 breast halves
- Lemon Juice
- Garlic, 3 cloves mashed or 1 tbsp
- Pepper, black, 1 tsp
- Olive Oil
- Vinegar Salad Dressing, 2 tbsp
- Lettuce, red leaf (salad), 1 head
How to Make Chicken Salad
Pound Chicken breasts. Marinate with garlic, lemon juice and pepper. Grill or pan cook with a little olive oil or cooking spray. Slice into pieces.
Layer salad starting with chopped lettuce, tomatoes, onions (sliced thin), then chicken and top with feta.
Dressing: mix olive oil and vinegar. Prepare the dressing after the salad is done. Use the dressing before eating.
